Several years ago, a harebrained idea to make a wedding cake for friends led to me sharing a picture of the cake layers stacked up in my freezer, ready for their big debut. You’d think people would comment on the cake, right? Nope. More like: “You have an empty freezer. You have an empty freezer. How?” “I didn’t know it was possible to empty a freezer.” And I was all “People have full freezers? We just use it for vodka and ice cube trays.” Oh Deb of 2008. Come see your circa-2016 freezer and witness the havoc 8 years and 2 kids have wreaked on it.

Vodka? Used it up to make vanilla extract. Ice cube tray? Currently empty as we use a bag we bought for a party and are too distracted to make more. The freezer these days is something you open an inch at a time, so no blocks of baby food, soup stock, ice packs, monkey-shaped ice packs for boo boos, teething rings, bread and boxed frozen things (fish sticks, mini pizza bagels, zucchini pancakes) for lunchboxes fall on your feet. Sure, there’s lovely stuff like a tray of mac-and-cheese and a chocolate babka, but the are in equal measure with potstickers and tortellini.

I hadn’t once, not even for a single second, considered the intersection of potstickers and tortellini until two months ago, when I caught a post on one of the longest-running and least assuming food blogs on the internet, Ideas In Food, in which they said they’d experimented by cooking frozen tortellini like potstickers and really liked the crispy results. Whaa? You know it took me about 24 hours to try this out and about .24 of a bite to be completely and totally jealous of my son’s dinner. Crispy tortellini are everything.

The usual approach to cooking frozen potstickers involves browning them, still frozen, in a hot skillet and then splashing in some water, covering them with a lid and letting them steam for a few minutes more until they’re perfect — crisp at the bottom, hot all the way through.* Of course, you can just do as we did the first time — warm up a little tomato sauce in a dish for easy dipping. But once I realized we were going to be making a habit out of these, I couldn’t resist playing a little, this time with creamed, minty peas and prosciutto, which takes all of 4 minutes extra (bringing the prep total of this meal to approximately 12 minutes) and basically looks like it came out of a restaurant kitchen. And not the freezer part, either.

* The reverse process — water and then browning at the end — also works, but to add lightly steamed vegetables to the mix, the former works best.

Good afternoon from vacation. We don’t need to talk about it. If you told me you were on a sunny beach with fine white silky sand between your toes, fluffy aqua waves lapping at the edges, palm trees swishing back and forth, scooping aquachiles onto tortilla chips and marveling at the range of available papaya hues while I was shoveling out snow for the nth time this year, I would smile politely and comment “How amazing!” on your Instagram but I would silently pout, as I probably will be a week from now. Let’s… not.

A week or so before I left, because the treadmill seems as good a place as any to think about what you want to eat next, I was overwhelmed with a craving for cauliflower cooked in a spicy tomato sauce. Gobi matar masala (cauliflower, peas, spices) is a a classic vegan North Indian recipe that fit the bill; the dotting of sweet peas adds is wonderfully complementary. When I came home and started looking through books and websites for recipes I realized that it’s more often a dry curry, made with a few tomatoes but most of the liquid evaporates, leaving a more concentrated mixture. The first time, I made it this way and it was fantastic, but my craving for a saucier version — more of a sabzi, if I understand correctly — remained. A friend confirmed that, like most traditional dishes, there’s no one agreed-upon way to make it and some days you may want it to be more of a stew than others. Feeling liberated, the next time I made it, I added a few cups of canned tomato puree and it was exactly what I’d hoped for. We ate it with rice but it would also be delicious with chapati, roti, or another flatbread.

There’s a lot of flexibility here. You can keep the cauliflower more crisp or let it relax more in the masala, depending on your preference. You can use more or less tomatoes, depending on how saucy you want the dish. You can crank up the heat with more chiles or chile powder; my kids aren’t quite there (yet!). And if you’re missing a single spice, I wouldn’t sweat it. I took note of some of the most common spices used but then went recipe-free, just cooking and adjusting to taste (and jotting everything down, dutiful food blogger that I am). It was cozy and unheavy and perfect; I froze the leftovers and can’t wait to have at least one meal all squared away when we get home.

Cauliflower and Tomato Masala with Peas (Gobi Matar)

If you’d like to brown your cauliflower florets for a more nuanced flavor, you can do so in an additional tablespoon or two of oil in the beginning, with your frying pan on high heat. Scoop it out and set it aside before beginning the recipe as written. Once you add the cauliflower to the tomato sauce later in the recipe, you might need 5 minutes less cooking time to get it to a good consistency (I aim for tender but not mushy here).

  • 1 large head cauliflower (3 pounds)
  • 2 tablespoons vegetable or olive oil
  • 1 teaspoon cumin seeds
  • 1 tablespoon finely grated fresh ginger
  • 1 tablespoon finely grated garlic (about 2 cloves)
  • 1 jalapeño or another green chile, finely chopped (use more or less to taste)
  • 1 big handful fresh cilantro, stems finely chopped, leaves roughly torn
  • 1/2 teaspoon ground turmeric
  • 1/4 to 1 teaspoon mild red chili powder (I used kashmiri), adjusted to taste
  • 1 1/2 teaspoons ground coriander
  • 1/2 teaspoon garam masala
  • 2 to 3 cups tomato puree from a 28-ounce can
  • 1 to 2 teaspoons kosher salt
  • 1 cup water
  • 1 1/2 cup green peas, frozen is fine
  • 1/2 teaspoon amchur (dried mango) powder or juice of half a lemon
  • Rice or flatbreads, to serve
First, prepare your cauliflower, just to get it out of the way. Trim the leaves. Remove the large core and dice it into small (1/4 to 1/2-inch) pieces. Cut or break the florets into medium-sized chunks.

Then, in a large, deep sauté pan, heat oil over medium heat. Once hot, add cumin seeds, ginger, garlic, and jalapeño and cook together for 3 minutes, until tender but the garlic and ginger are not browned. Add diced cauliflower core and finely chopped cilantro stems (save leaves for the end) and cook for another 1 minute together. Add turmeric, chili powder, coriander, and garam masala and cook for 2 minutes. Add 2 to 3 cups tomato puree — use the smaller amount if your cauliflower clocks in in the 2 to 2.5-pound range, or if you’re not sure you want dish as saucy as mine is, plus salt (1 1/2 teaspoons was just right for my 3 cups puree), and water and bring to a simmer, cook for 5 minutes. Add cauliflower and stir to coat with sauce. Cover with a lid and cook for about 20 minutes, until cauliflower is tender but not mushy, stirring occasionally. Add peas (still frozen are fine) and cook for 5 to 10 minutes, until heated through. Add amchur powder or lemon juice and stir to warm through. Taste dish for seasoning and adjust to taste. Finish with cilantro leaves. Serve with rice or flatbread.

burrata with charred and raw sugar snap peas – smitten kitchen

I finished the peas with more olive oil, mint (or basil), and lemon, and used Music’s suggestion of adding more heat through Calabrian chiles in oil (dried red pepper flakes work too). This alone makes a fancy salad kind of meal, or but grilled chicken sausages or a sheet pan of your favorite meatballs would make it more substantial.

If you can’t find burrata, look for buffalo mozzarella, and if you can’t find that, just fine the freshest that you can. You might find that you want up to a pound of it as it doesn’t spread out into as many bites as burrata. Slice it open (or into a few thick slices, laid out on a plate), and let it warm up if you’ve got the time. It makes a big difference. “In a perfect world, mozzarella will never have been refrigerated, but these are imperfect times,” Music explains, to my delight.

  • 1 8-ounce ball burrata
  • Olive oil, for drizzling and brushing
  • Flaky sea salt
  • Freshly ground black pepper
  • Half a lemon
  • 1 pound sugar snap peas
  • 1 to 2 thick-cut slices crusty bread (I’m using miche here)
  • A handful of mint and basil leaves, torn or thinly sliced
  • Chiles in oil or red pepper flakes to serve
Butterfly your burrata: Drain burrata and gently dab dry on a paper towel. Place on serving platter. Begin to cut in half vertically (i.e. into left and right halves) but stop halfway and turn knife sideways (in either direction) and cut out to wall of burrata but not through. Use knife to flip it open onto the plate, then spread the center cream a bit into a flat layer. Repeat on second side. Drizzle lightly with olive oil and sprinkle with flaky salt. Let sit at room temperature while you prepare everything else, or up to an hour, if you have the time. Taking the chill off it is the key for the creamiest insides and best flavor.

Trim/de-string your sugar snaps and place in a large bowl. Drizzle with 1 tablespoon olive oil (or more, to taste), many grinds of black pepper, and sea salt and toss to evenly coat.

Grate or shred your bread with your fingers into coarse crumbs. I omitted my crusts because they were stale and very dark. You want a little shy of 1 cup.

Grill instructions: Prepare your grill for medium-high direct heat.

Make the crumbs on the grill: Place a small cast iron frying pan on a medium-high heat on your grill and place the torn bread and a glug of olive oil inside, enough to dampen the crumbs. Season with salt and cook the crumbs, stirring from time to time, until they’re golden and crisp. About a minute before they reach the perfect color, finely grate the zest of half a lemon over them and stir to heat and combine. Set crumbs aside.

Grill your sugar snaps: Place half your prepared sugar snaps in on a wire rack or grill basket on a grill and grill, tossing occasionally, until charred in spots, about 3 to 5 minutes. Transfer back to bowl with remaining raw sugar snaps and toss to combine.

Stove instructions: Make the crumbs on the stove by following the above instructions but use a large, heavy frying pan over medium-high heat, the same one you’ll use again for the sugar snaps. Scoop the crumbs out into a bowl to cool.

Blister your sugar snaps on the stove: Heat the large, heavy frying pan you used for the crumbs over high heat. Add half of prepared sugar snaps and cook, tossing occasionally, until charred in spots, about 3 to 5 minutes. Transfer back to bowl with remaining raw sugar snaps and toss to combine.

To finish: Scatter charred and raw sugar snap mixture over butterflied burrata along with crumbs. Drizzle with more olive oil, flaky sea salt. Add mint or basil leaves and serve with chiles in oil or red pepper flakes to taste.
